Create a small indentation in the center of each patty with your thumb, which will help the burgers cook evenly and prevent them from puffing up in the middle. Season the patties generously with salt and pepper on both sides.

  3. Preheat your grill to medium-high heat. If using a charcoal grill, create a two-zone fire by placing the coals on one side of the grill, allowing for direct and indirect cooking. If using a gas grill, simply preheat the grill to the desired temperature.
